Ingredients for making Golgappas
Maida – 1/4 cup
Semolina – 1 cup
Boiled potatoes – 4-5
Black gram boiled – 1/2 cup
Onion finely chopped – 1
Green chili – 2
Mint leaves – 10-15
Jaljeera – 1 sachet
Curd – 1/2 cup
Tamarind chutney – 2 tsp
Chaat masala – 1/2 tsp
Boondi – 1/4 cup
Black pepper powder – 1/2 tsp
Coriander leaves – 1/4 cup
Oil – for frying
salt – as per taste
Golgappa Recipe
To make market-like tasty golgappas, first of all mix all purpose flour, semolina and a pinch of salt in a vessel. After this, add water little by little and knead the dough. After kneading the hard dough, cover it for 20 minutes and keep it aside. Then make balls from the dough. Now take one ball and roll it round like roti. Now take a round lid and keep cutting Golgappas. Take them out in a plate and keep them separately. Prepare Golgappas in the same way with all the dough.
Now put oil in a pan and heat it on medium flame. When the oil becomes hot, add chopped golgappas and deep fry them. Golgappas will puff up like puris, after that fry them golden and take them out in a plate. Similarly fry all the golgappas. After Golgappas are made, start the process of making stuffing. For this, first boil potatoes and gram.

Now peel the boiled potatoes and mash them and put them in a bowl. After this add boiled gram and mix both. Then add finely chopped green chillies and onions. Add chaat masala, a little salt, black pepper powder to it and mix well. Now prepare water of jaljeera and mint and add boondi to it. Now make a hole in the center of Golgappa and fill the stuffing in it. Then serve after immersing it in jaljeera mint water.
